Cider flavour profile

  • Taste: semi-sweet, crisp acidity, very gentle tannins, explosive and tingling bubbles; unripe apples and mild notes of vanilla, then secondary notes of fresh green apples

Tasting Notes on Kami by Giraudo

With Kami, Giraudo has created a beautifully balanced single variety cider. Made with only Granny Smith apples from Italy, Kami comes across as incredibly refreshing, with high acidity and notes typical of Granny Smiths, but also perfectly balanced by residual sugars, retained in this cider through slow fermentation at low temperatures. After the first energising notes of green (almost unripe) apple, you are left with a mouthwatering feeling, brilliantly created by the crisp acidity.

Perhaps it was due to the fact that I tasted this cider on Friday night after a very intense week of work, but I can honestly say that with every sip I felt noticeably more relaxed and at peace.

To compliment the evocative flavour profile of this cider, Giraudo has picked the name ’Kami’, and after the first few tastes I can see why. This cider reminds me of those poetic, minimalist paintings that with only a few masterfully positioned brushstrokes manage to create powerful images that shake us to our core.

Con questa mentalita’ rispettosa degli elementi naturali abbiamo creato il sidro Kami, ottenuto dalla spremitura a freddo delle nostre mele Granny Smith, successivamente fermentate a basse temperature senza l’aggiunta di zuccheri. E’ un sidro monovarietale, estremamente delicato, leggermente dolce, che mantiene l’acidita’ tipica della cultivar.

English: “One of the most widespread philosophies in Japan is based on the veneration and thanksgiving of the Kami, entities that permeate the entire world and to whom the utmost respect must be paid. With this mindset of respect for the natural elements, we have created Kami cider, made from the cold pressing of our Granny Smith apples, then fermented at low temperatures without the addition of sugar. It is a monovarietal cider, outwardly delicate, slightly sweet, which maintains the typical acidity of the Granny Smith apple variety.

Food pairing

Kami cider is a great match for sushi, light bites, and appetizers, and it’s perfect as a refreshing aperitif. Otherwise, just chill it and enjoy its crisp, fresh character!
